Dark Chocolate Cupcakes with Chocolate Chunk, Cream Cheese Centers

Rich and gooey dark chocolate cupcakes with chocolate chunk cream cheese centres.

  • 24 cupcakes

Ingredients

Topping:

  • 1C cream cheese
  • 3 tbsp liquid egg white
  • 1/4C coconut sugar
  • 1/2 tsp salt
  • 1C (8 ounce bar) of dark chocolate, chopped into chunks

Cupcake Batter:

  • 1 1/2C whole wheat flour
  • 1C white sugar
  • 1/4C cocoa
  • 1 Tsp baking soda
  • 1/2 tsp salt
  • 1C water
  • 1/3C Coconut Oil, melted
  • 1 tsp vinegar
  • 1 tsp vanilla extract

  1. Preheat oven to 350F. Grease muffin tins with coconut oil, then flour.
  2. Using a stand mixer, beat cream  cheese to a creamy, smooth consistency. Mix in egg, sugar and salt and cream to uniform smooth consistency.
  3. Stir in chocolate chips using a spatula.
  4. In separate bowl, whisk dry ingredients. Set aside
  5. In another bowl, combine liquid ingredients.
  6. Stir liquid ingredients into dry ingredients.  Be sure not to over mix.
  7. Spoon the chocolate mixture into muffin tins. Fill about 2/3 full.
  8. Top each muffin tin with a tbsp of the cream cheese mixture.
  9. Bake for 20-25 minutes, unit the cream cheese mixture being to turn a golden colour, and the chocolate mixture no longer “wiggles” when you shake the pan.
  10. Remove from oven and cool 0n wire rack for a few minutes before digging in.
